Cooking stuff

Mom or Dad, could you post some instructions for making broccoli and potatoes the way we do at home? I have broccoli, olive oil and potatoes and acquired some rosemary (from the campus garden). I forgot to ask last night how to do it.

I got a 96.5 on my midterm, which was the highest grade in the class, except for another girl who got the same score. But she speaks Arabic, so she has an unfair advantage. In my heart, I beat her. :)

Ingredients - Broccoli, Potatoes, salt, pepper, rosemary, onion (optional), scrambled egg (optional)

First make sure your vegetables & especially the rosemary are thoroughly washed. The broccoli should be cut into bite sized pieces, and the potatoes cut up also. It helps if you cut the potatoes into about the same sized pieces. The rosemary should be picked from the branches & chopped up fine.

Now you need to cook the broccoli and the potatoes. I use the microwave, and put, first the broccoli into a bowl with some water, cover the bowl with a plate, and microwave until the broccoli is tender but not too soft. Then do the same with the potatoes.

If you don't have a microwave, you should boil the pieces of potatoes & broccoli in 2 pans of water.

Now you can saute the whole thing. Get a fry pan quite hot, but not too hot. Put in the olive oil. The oil is hot enough if when you put a small potato or onion in the pan, it sizzles up right away. But if it's too hot you might burn your onions. Saute some onions first, if you want. Then put in the potatoes, then salt (plenty), pepper & rosemary, and cook until the potatoes are browned. Put the broccoli in close to the end & let it brown a little bit too. If you want to put a scrambled egg in the mix, do it at the very end.

You can do it the easy way. Cut whatever you have into bite size pieces (~1 inch square). Put it all into a shallow oven pan or a cookie sheet with some sides. Drizzle olive oil on top. Mix it all up with your hands so everything gets coated. Salt (taters need lots of salt) and pepper it. Roast at about 375 to 400. Go in every 15 min or so and toss everything around so it cooks evenly. Put chopped rosemary in about halfway. Taters and broc should work pretty well together, they both take a while to cook. Other veggies may need to be put in later so they're ready at the same time. When they start to brown and are tender to a fork they're ready. (Adding garlic and butter later on in the process would be good too).

Eat some hummous too.
